What is the Vin Perlé de Gaillac ?
It is a dry white wine with a few pearls on the tongue. To obtain these fine pearls, the second fermentation on the wines, called malollactic fermentation, is started (note that on whites, this is a fermentation that is not practiced, since its purpose is to remove the acidity of the wine). This second fermentation will release carbon dioxide which will give us the pearls. Simply stop the fermentation with SO2 and bottle it quickly to preserve the pearls.

Visual
Pale yellow colour. Clear and very bright wine.
Olfactory
Very fine and pleasant nose. Aromas of citrus fruits such as lemon as well as notes of white flesh fruits.
Taste
An opening with a good freshness, the pearls are well present in the mouth, all in finesse. An aromatic finish with a good vivacity.
Ageing
drink within the year as the pearls tend to fade over the months.
Food and wine pairing
Perlé white wine goes very well with shellfish, especially oysters. It can also be served as an aperitif with a crème de cassis.
