Keep for 15 years or more.

Serve at 9-10°C with foie gras, blue cheese, melon, chocolate or simply as an aperitif.

Harvesting
Like a late harvest, its credo is noble rot, the famous fungus better known as Botrytis Cinéreas.
The grapes are picked by hand, in several successive sortings that extend the harvest until the end of November
.
Vinification
This product is neither chaptalised nor yeasted (natural yeasts from the grapes). The grapes are slowly pressed into whole berries and fermented at low temperature. The wine then spends 4 to 5 months in new barrels. The final balance of this wine is 13% vol + 130 grams of residual sugar.

Tasting

Visual
Straw yellow colour. Clear, bright with lots of tears that appear very slowly.
Olfactory
Very rich and complex nose. We find aromas of dried apricots, sultanas as well as candied notes. A beautiful harmony with very powerful aromas.
Taste
Explosive opening, frank and pleasant. A lot of richness and fatness. A very fine, smooth wine with a very long finish.
Ageing
this wine has a great ageing potential (15 years and more). Time gives the sweets an old gold colour, more smoothness and fatness, while retaining a certain freshness.
Food and wine pairing
This sweet white wine is ideal as an aperitif. It can of course be served with foie gras.
Try it also on Roquefort cheese!
